How is Farm to Table different from local sourcing?
Local sourcing focuses on ingredients produced and consumed within a region. Farm to Table also emphasizes a short, transparent journey from producer to guest and a closer relationship between the people who grow food and those who enjoy it.
Where do the ingredients come from?
We use seasonal ingredients from NORICHIE’s own garden and from local producers in and around Semboku, Akita.
Do the ingredients and menus change with the seasons?
Yes. Our menus follow what is naturally in season, so the dishes change according to the time of year and the moment of your stay. For guests staying several nights, we prepare a different dining experience each day.
Can dietary restrictions and allergies be accommodated?
With advance notice, we will do our best to accommodate allergies and dietary requirements where possible. Please share the details when making your reservation.
Can every guest take part in the harvest experience?
Because NORICHIE welcomes one private party per day, the experience can be arranged around your group’s pace. Harvesting is subject to the season, weather, and condition of the fields.
