Farm To Table NORICHIE

What Is Farm to Table?

Farm to Table is an approach to dining that brings ingredients from the land to the plate through the shortest possible journey. It celebrates produce at its seasonal peak, the people and place behind it, and the quiet pleasure of eating well, close to where food is grown.

Meaning

From a Movement to a More Meaningful Table

Farm to Table first gained recognition through restaurants committed to sourcing fresh ingredients directly from nearby farms. It shares common ground with local sourcing, but places particular value on shortening the journey from producer to guest and making that relationship more visible.

Today, it also represents a more thoughtful way to dine: one that follows the seasons, supports regional producers, reduces unnecessary transport, and invites us to understand a place through its food.

NORICHIE Style

Farm to Table, the NORICHIE Way

01

A Table That Begins in Our Garden

Our menus draw on vegetables from NORICHIE’s own garden and seasonal ingredients from trusted producers around Semboku. When the weather and fields allow, guests may step into the garden, harvest vegetables, and later encounter them at breakfast or dinner.

02

One Private Party, One Considered Menu

NORICHIE welcomes only one party each day. This intimate setting allows us to respond thoughtfully to the condition of the fields, the character of each ingredient, and our guests’ preferences in a way that larger properties rarely can.

03

Akita Sake, Paired with the Landscape

Pairing seasonal food with carefully selected local sake is an essential part of the NORICHIE experience. Tasted together, the ingredients and sake reveal something of Akita’s climate, craftsmanship, and generous spirit.

FAQ

Frequently Asked Questions

How is Farm to Table different from local sourcing?

Local sourcing focuses on ingredients produced and consumed within a region. Farm to Table also emphasizes a short, transparent journey from producer to guest and a closer relationship between the people who grow food and those who enjoy it.

Where do the ingredients come from?

We use seasonal ingredients from NORICHIE’s own garden and from local producers in and around Semboku, Akita.

Do the ingredients and menus change with the seasons?

Yes. Our menus follow what is naturally in season, so the dishes change according to the time of year and the moment of your stay. For guests staying several nights, we prepare a different dining experience each day.

Can dietary restrictions and allergies be accommodated?

With advance notice, we will do our best to accommodate allergies and dietary requirements where possible. Please share the details when making your reservation.

Can every guest take part in the harvest experience?

Because NORICHIE welcomes one private party per day, the experience can be arranged around your group’s pace. Harvesting is subject to the season, weather, and condition of the fields.
